M39 GT represents the new frontier of traditional espresso machines. Presented by Cimbali at Host 2009, the M39 GT was developed at the Binasco research centre in collaboration with some of the world’s leading coffee experts. The popular design of the M39 has been enhanced with materials originally used in the automotive industry.  The new shape of the group heads adds an even more hi-tech edge to the machine, universally acclaimed by the public and used by AICAF for the Gran Premio della Caffetteria awards.Cimbali has also launched other innovative ideas including the on Demand grinder-doser, HD concept and Wireless LAN interface between the machine and the grinder-doser.

The M39 GT: power and precision
The high quality of the beverages made with the M39 GT is guaranteed by Cimbali’s new thermal technology. The machine combines flexibility and thermal stability with the legendary reliability that has always distinguished Cimbali products. The M39 GT’s patented thermal system consists of a 10-litre boiler fitted with two heat exchangers operating in series, and independent stabilisation chambers for each unit. Each chamber has a capacity of 400 cc and 800 Watt resistance. The designers have managed to combine the traditional Cimbali cartridge exchanges with the latest-generation stabilisation chambers, maximising the benefits of both solutions:  power and precision.
The water for the coffee is pre-heated in the exchangers, distributed evenly to the stabilisation chambers and then heated to the set temperature.   This ensures excellent thermal stability, extreme flexibility (from espresso to café crème), and allows the temperature of each unit to be adjusted independently, in just a few seconds. Meanwhile the 10-litre boiler, equipped with the patented Smart Boiler software, offers all the steam that a modern coffee service requires, without ever affecting the quality of the coffee.

Magnum on Demand
The M39 GT is available with the Magnum on Demand grinder-doser - touch screen version. With this system, the beans are ground before the coffee is dosed into the filter just a few seconds before the espresso is extracted – thus preserving all the fragrance of the roasted coffee. Magnum on Demand is easily programmable and enables fast, accurate dosage adjustment: one touch of the display and the process is complete.

M39 HD
Coffee extraction is a process in which hot water is distributed on the coffee panel. The variables involved in this process are water temperature and extraction pressure.  To allow the simultaneous control of the two variables, Cimbali has developed the High Definition (HD) concept. It is based on patented technology that controls the entire extraction process in a simple, user-friendly way.  In conventional machines, the process cannot be modified.  Pump-operated machines, for example, maintain constant pressure throughout the dispensing phase.  After the pre-infusion stage, the dispensing pressure rises from the initial level of the mains up to about 9 bars, where it remains evenly until dispensing is complete.  In lever-operated machines, very high pressure is built up at the start of extraction (12-14 bars) and gradually falls until the process is complete. Neither of these technologies can guarantee optimal extraction at all times, because different coffee blends have different characteristics that require specific extraction settings. The M39 HD enables flexible temperature control, as with the M39 GT. The pressure at which water is dispensed can also be adjusted electronically through the display.  In this way, pressure can be controlled, resulting in a better yield of those substances responsible for the body and the aroma of the coffee, simultaneously limiting the amount of less “desirable” substances.

Wireless LAN
This is a wireless connection between the M39 and the Magnum on Demand grinder-doser. Using this type of connection, patented by Cimbali, the machine and the grinder-doser can communicate easily and quickly. Once the settings are in place, the machine calculates the average value of the water dispensed for the first 20 extractions. The machine then memorises this value and uses it as the “ideal” setting. After every 10 shots, the machine calculates the average volume of dispensed water and compares it to the memorised “ideal” value. If there is a significant difference (the threshold can be set by the operator), the machine then sends a digital signal to the grinder-doser, which automatically adjusts the grinding and dose.
